1. Put oil in pot, heat. Add onion and carrot, sprinkle with salt and pepper and cook 3-5 min until softenened. Add tomato paster and lower heat while stirring for 1-2 mintues.2. Strp the thyme from stem and add to pot along with tomatoes. Cook stirring occasionally (10-15 minutes) Add 2 cups of water or juice and bring to a boil, and finally adjust to a simmer. Let it cook 5 ? 10 more minutes.3.
