There is nothing bland about this soup, it has a really powerful flavour!I used the tomato juice strained from de-seeding a ridiculous number of tomatoes by hand during preserving season. It was actually because I didn't want to waste such flavourful juice that I created this recipe. The half and half cream cuts the acidity in the end product. In addition in provides an important balance of fats and a little more protein.

8 cups tomato juice
2 low sodium vegetable broth cubes
2 tsp olive oil
1 medium onion, minced (about 1 cup)
1/2 a medium red onion, minced (about 1/2 cup)
4 stalks celery, minced (about 3/4 cup)
4 cloves garlic, pressed/crushed
1 tbsp oregano
1 1/2 tbsp basil
1 tsp black pepper
1/2 tsp celery seed
4 medium tomatoes, de-seeded & chopped (about 2 cups)
2 cups half and half cream
2 tsp agave syrup (optional)
1 regular sized can navy beans, rinsed (about 1 1/3 cups)



How Do I Make Tangy Garden Tomato Soup?

Here is how you make Tangy Garden Tomato Soup:

- Put tomato juice in a large pot and bring to a boil, uncovered, over medium heat. Add the broth cubes and continue to boil to evaporate some of the water in the juice until you have about 7 cups remaining. This will take about 45 min and you will need to give it a stir once in a while. - Meanwhile, heat olive oil in a frying pan over medium heat. Add both types of onions, garlic and celery. Fry until onion turns translucent.- Once the juice has boiled down, add the onion mixture, oregano, basil, pepper and celery seed. Boil for another 15 min uncovered. - Add the chopped tomatoes, navy beans and agave syrup (if using) and continue to boil for another 15 min. - Lastly, reduce heat to low and add the half and half cream, stirring well. Continue to heat for another 10-15 minutes.***If anyone knows how to keep the cream from looking "grainy" after its been added please comment - I know it's because of the acid, I just don't know how to prevent this.***Serve with a little grated cheddar cheese over the top and some hearty grain bread.
