2 Cans Del Monte stewed tomatoes
2.25 cups vegetable broth

Heat the oil in a Dutch oven over medium heat. Add the onion, bell peppers, garlic, rosemary, salt and black pepper. Reduce heat to low, cover, and cook, stirring frequently, for 12 minutes or until the veggies are tender.Add the squash, Cover and Cook stirring once for 5 minutes, or until the squash just starts to get tender.Increase heat to medium. Add the tomatoes, cover, and cook, stirring frequently, for 5 minutes or until tomatoes start to give up their juices.Add the broth and stir to mash the veggies slightly.
