3 medium size ribs of celery, chopped
2 medium carrots, raw , cut into rounds
1 medium red onion chopped
1 medium-sized sweet potato, cut into cubes
1 medium sized russet, with skin, cut into cubes
1 zucchini, chopped medium
1 can cooked green Beans
1 can or 1 cup frozen sweet corn
1 cup barley, pearled, raw
1 can fire roasted diced tomato
1 tbsp Better than Boullion vegetable base
2 cups tomato juice

Here is how you make Kitchen Sink Vegetable Barley Soup (Vegan):

Make up two cups of broth using the vegetable base. Put one cup of the vegetable broth in a large stock pot and saute the onion, celery and carrots just until fork tender. Add the potatoes and zucchini and the remainder of the broth. Add tomato juice, tomatoes with juice, beans corn and barley, stirring well to be sure that barley is completely immersed. Let soup simmer on stove top until barley is fully cooked. Keep watch that it doesn't scorch on the bottom by frequent stirrings.
