This is a delicious soup and very simple. I prefer to make it in the crock pot, which is very simple: there is no risk of burning the soup, and it makes for easy clean-up.

Which vegetables you use and how much of them is all up to you, your preferences and local availability. The fresher the vegetables, the better the soup. I find with very fresh vegetables and high quality crushed tomatoes, no stock is needed, though you can add stock or a low-sodium boullion cube if you wish.

3 cups fresh okra, chopped 1/3 inch thick
corn kernels, equivalent to 3 large ears
2.5 cups fresh green beans, chopped into 1.5 inch segments
Yellow summer squash, chopped into medium-large pieces
2 carrots, sliced 1/4 inch thick
1 cup sweet onion (such as Vidalia) diced - can use more or less to taste
1 16-oz can of crushed tomatoes
1 Tbsp Extra Virgin Olive Oil
1 clove crushed garlic
Any other herbs or spices you like; I add: 1/2 teaspoon cayenne, 1/2 teaspoon black pepper
Salt to taste

Wash and chop all vegetables and add to a large mixing bowl. Stir as you add, so that you can see if you have the right proportion of vegetables for your taste. Once you're satisfied with proportions, add vegetables to cold crock pot, putting any excess in freezer bags so you can use them to make another batch of soup later!Add the crushed tomatoes, olive oil, garlic and any other spices, and stir. If you are using a boullion cube or stock, add it now. (No need to dissolve the boullion cube, since the crock pot will do it for you.)Add just enough water to cover and follow the crock pots directions to turn it on. It will take approximately 4-5 hours on high or 8 hours low.Leftovers may be frozen in appropriate containers.Enjoy with a slice of multi-grain toast or some whole grain crackers.
