15 oz. diced tomatoes, with their liquid, plus 1 can water
1/2 cup dried lentils
1/2 tsp. salt
5 - 6 oz. spinach (about 4 cups)

In a Dutch oven or large stockpot, heat the oil over medium-high heat and when it is hot, add the onions and carrots. Saut? it until the onions just begin to brown, about 10 minutes.Add the garlic, cumin and barley and saut? them for 1 minute until the garlic is fragrant.
