Here is how you make Zucchini Yellow Squash Vegetable Soup:

Saute onion in olive oil until translucent then add diced red pepper and cook about 3 minutes more. Add chopped zucchini and yellow squash, carrots, spinach and seasonings and saute about 3 to 5 minutes longer.Add canned beans, tomatoes, chopped tomatoes and broth and any remaining seasoning including salt to taste, stir and bring to a boil. Reduce heat, cover and simmer about 10 to 12 minutes until zucchini is cooked but not falling apart.
