1. In a large, nonstick stock pot coated with cooking spray, saute the garlic, onion, celery, and mushrooms over medium heat for 10 minutes, or until tender.2. Add the stock, carrots, zucchini, green beans, cauliflower florets, cabbage, canned tomatoes, and bay leaves. Add dry seasoning blend (Creole or Italian) now. Bring to a boil, cover, and simmer over low heat for 20 minutes.3. Add the vinegar and cook for an additional 2 minutes. Remove the bay leaves before serving or freezing.4. Storage/freezing directions: Allow soup to cool to room temperature. This recipe can be prepared up to 3 days in advance and stored in the friedge.
