1 large tomato
1 small zucchini
1/2 cup of sliced mushrooms
1/2 cup of uncooked white rice
1/2 can of tomato paste
1or 2 garlic cloves
1 tbsp flour
2 tsp olive oil
1 large bay leaf
1 1/2 tbsp of dried oregano
1tsp marjoram
1tsp thyme
4 dried cayenne peppers (optional)
1 tbsp lime juice
salt to taste
pepper to taste


How Do I Make Spicy Veggie Soup?

Here is how you make Spicy Veggie Soup:

Bring heat to medium under a medium sized pot. Dice the onion and the garlic and sautee in the olive oil until the onions soften. Add flour and stir until the onions are thoroughly coated, if there is any loose flour in the pot, add small dribbles of olive oil until all the flour is a paste coating the onions.Add one cup of water and the tomato paste, stir until the tomato paste is homogeneously dispersed throughout the water then add three more cups of water.Dice the zucchini and the tomato into large-ish chunks and add to the soup with the sliced mushrooms and the rice.Add the oregano, marjoram, thyme, bay leaf, whole dried cayenne peppers (if you still want that kick but you don't have access to the whole dried pepper, add about a teaspoon of cayenne powder, or to taste), salt, and pepper.Bring to a simmer, stirring occasionally, for about 20-25 minutes, or until the rice is tender.
