90ml chicken or vegetable stock
pinch of saffron
3 salad onions thinly sliced
60g couscous
grated zest and juice of 0.5 lime
0.5 small red chilli, deseeded and finely chopped
1 tbsp pine nuts

Here is how you make Spicy Couscous:

Heat 1 tsp of the oil in a pan, add garlic, cumin, coriander and paprika, fry gently for about 1 min.Add stock and saffron, bring to boil, add salad onion, then tip in the couscous, give it a quick stir.Cover pan with tight fitting lid, remove from heat and leave for 5 mins to allow grains to swell and absorb all the liquid.If serving it warm, add the rest of oil and rest of ingredients, lightly fluffing up the grains with a fork.OR, if seving it cold, leave it to cool and chill in fridge before adding rest of oil and ingredients.Number of Servings: 2Recipe submitted by SparkPeople user CHEEKYCHOOK.
