Spray a 9-inch square baking pan with non stick spray. Arrange bread slices in the bottom. Set aside. Preheat oven to 375 degrees.Cook onion in oil over medium heat in nonstick skillet. Stir in spinach. Cover, reduce heat and cook gently for 4-5 minutes, stirring occasionally and breaking up any large lumps of spinach, if necessary.Meanwhile, stir together seasonings, cheeses and egg substitute.Remove the pan from the burner.
