Here is how you make Spinach Feta Risotto:

In 1T. oil, saute garlic and mushroom until mushrooms are soft, add 2 T of white wine and fresh dill. keep warm till rice is done.In remaining oil, saute onion till golden, stir in rice until well coated in oil. Add remaining wine and stir constantly till wine evaporates. Add stock 1 c. at a time until the liquid disappears (takes about 25 min).
