Defrost spinach, place in dish towel and squeeze out the water.When onions are translucent add the spinach that has been "squeeze dried" (LOL). Stir to combine very well, shut off heat. In large bowl combine eggs and egg whites, add spinach mixture and mix well. In a rectangular glass baking dish, spray with non-stick spray and add egg mixture.Slice tomatoes, lay on top of mixture in chevron pattern and bake @ 350 for about 30 minutes. Depending on depth of your baking dish, check after 20 minutes and gauge the remanining cooking time. Remove from oven when cooked, shut off the oven, top fritatta with low fat swiss cheese, and return to oven for five minutes or so to melt the cheese.
