1/2 -pkg whole wheat lasagna noodles aprox
12 noodles needed.
1 -1kg bag of baby Spinach
1 -500ml 1% skim cottage cheese drained
4 -TBS dried/shredded parmesan cheese
1/4 -tsp ground nutmeg
3/4 -cup low fat mozzarella cheese
Salt and Pepper to taste
Low sodium herb Spaghetti Sauce

Here is how you make Spinach "manicotti":

Preheat oven to 350 degrees farenheit Cook noodles according to instructions on package. Steam spinach until tender; cool and drain VERY WELL and chop. (squeezing it through cheese cloth works well). Add cottage cheese, parmesan, nutmeg, 1/2 the mozzarella cheese and the salt and pepper. Spoon a couple of tablespoons onto a cooked lasagna noodle, spread spinach mixture evenly and roll up. Place each roll, seam down, into a baking dish. Pour Spaghetti sauce over the spinach rolls and top with remaining mozzarella cheese.
