Add onions and garlic and salt and pepper to taste. Cook for 2-3 minutes, then add mushrooms and cook until tender. In a large bowl, lightly beat 2 eggs. Add the ricotta, then slowly add the cooked onions, garlic and mushrooms (so you don't cook the eggs). Add in well drained spinach and mix well. Grease an 11 x 17 pan with cooking spray. Place one layer on noodles on the bottom. Cover noodles with a thick layer of spaghetti sauce, then spoon on 1/2 of the onion/spinach/ricotta mixture. Place a layer of mozzarella on top of the mixture. Now another layer- noodles, sauce, the rest of the ricotta mixture, and more mozzarella. Finish with one more layer of noodles, the rest of the spaghetti sauce, then the rest of the mozzarella. Sprinkle the parmesan on top. Cover tightly with foil and bake at 400 degrees for 1 hour. Remove foil and cook for an additional 20 minutes.
