2 garlic cloves
1/2 tbsp butter, olive oil or cooking spray
1 cup spinach
2 corn tortillas
1/3 cup of mozarella or your choice of cheese (pepper jack would probably work well)

Light sour cream
Taco sauce or Salsa

Here is how you make Garlic, Spinach and Mushroom Quesadilla:

1. Chop garlic & mushrooms. Melt butter in a pan and saute the garlic, mushrooms and add spinach too. 2. Heat a gril or you could probably do it in the same pan as the sauteed veggies. Put one corn tortilla on the pan or grill. Sprinkle 1/2 the cheese on it. Then, layer the satueed veggies over the cheese and then layer the remainder of the cheese. Top with the 2nd tortilla. 3. Once cheese is somewhat melted, flip on to the ungrilled side. Cook until cheese is melted through and tortillas are toasted as desired.
