Cut Eggplant into pieces, Green onion finely chopped, Dice tomatoes into small pieces.Cook spinach in microwave for 5 to 6 min. Add 3 tbsp. oil in wok when hot add cumin seeds, 1 cinemon stcik, whenlight brown add asaefoetida, crushed garliic/ginger/green chillies saulte it and add Ground coriander seeds,cumin seeds,turmeric add green onions and salt let it cook for 2 min. than add eggplant cook it covered for 5 to 7 min. then add diced tomatoes and sugar when tomato get mushed add spinach and let it cook for another 5 min. till everything gets nicely cooked. Let it simmer for 2 to 3 min. covered at slow temp. Take it out in a serving pot and garnish with chopped coriander.Serving Size:?5 people
