Add Barilla Farfalle or other whole wheat pasta and cook according to package directions. Thaw spinach and drain well or wrap in towel and squeeze out excess water. Drain pasta well and add thawed spinach, place in separate bowl and set aside. In same saucepan, heat 2 tbsp olive oil over medium heat; add onions (garlic??) & mushrooms and cook until tender. Add to pasta, spinach mixture. In same saucepan heat 1 tbsp olive oil (why oil here?), 1 cup chicken stock, bring to a boil and cook until liquid is reduced by half. Dissolve 1 tbsp corn starch in 2 tbsp water & whisk into sauce. Lower heat; whisk in sour cream, do not boil.When thickened add pasta, mushroom, spinach mixture and blend.
