3 med-to large eggs
1 cup fresh spinach, chopped
1.25 large sweet onion, chopped
1 tbsp olive oil
0.25 cup evaporated milk
0.75 red pepper, chopped
0.5 cup feta cheese, crumbled
4 oz mozzarella cheese, shredded
3 cloves of garlic, minced
1 tsp creamy horseradish

Here is how you make Spinach and Feta Quiche (low cal):

(Makes 8 servings, a slice is a serving.)Preheat oven to 400 degrees F.Defrost frozen pie crust.Heat olive oil in saute pan over medium to medium-low heat. Once oil is hot, add minced garlic.Combine chopped onions, red pepper, spinach in a medium sized bowl and sprinkle with salt and pepper (1/2 tsp each, or to taste and health preferences); mix and add to saute pan with oil and garlic.Saute onions, pepper and spinach until the onions become translucent and the spinach cooks down. Turn cooking vegetables so that they are evenly cooked, at which point remove from heat and let cool.In the newly vacated bowl, whisk the eggs, evaporated milk and horseradish. Add crumbled feta cheese and cooked vegetables to the egg mixture.Set pie crust in cookie sheet and use a fork to puncture the bottom of the pre-made pie dough. Pour the quiche filling into the pie crust. Sprinkle top with mozzarella and grate some pepper on top of that.Place in oven and cook at 400 degrees F for 40 minutes or the top is turning bown and a knife can be inserted in the center and removed cleanly.Cut into eighths.Serve.Enjoy.
