What Are The Ingredients For Spinach Pesto (Vegan/Vegetarian) Recipe?The ingredients for Spinach Pesto (Vegan/Vegetarian) are: 4 cup Spinach, fresh, rinsed and slightly torn1 15oz can Cannellini Beans (rinsed and drained) 2 cloves garlic, roughly chopped 3 tbsp Extra Virgin Olive Oil 1 Lemon, fresh squeezed, juice of one whole lemon .5 tsp Nutmeg, ground 2 tsp Pepper, black 2 dash Salt .5 tsp Cayenne Pepper How Do I Make Spinach Pesto (Vegan/Vegetarian)?Here is how you make Spinach Pesto (Vegan/Vegetarian): The recipe is really easy: I rinsed and tore the spinach just enough to fit it in my blender (I used full-size spinach leaves- not baby spinach), blended enough to chop it up. Added the beans and garlic, blended a bit more to slightly combine. Added the olive oil, spices, lemon juice. Blended until well-combined.1/4 cup sauce was plenty for me on a big bowl of whole wheat pasta. It would be REALLY good with some chopped tomato thrown on top (of the finished sauce, not blended in) or some Parmesan cheese. Hint- I initially poured out .25 cup olive oil to add- it did not need all of it so I only ended up adding 3 TBS. Also- I do not measure my spices, so these are approximate- add a small amount and then add more if needed.
