Here is how you make Butternut Squash Quinotto:

Preheat oven to 350 degrees F.Put butternut squash in a bowl and add 1 Tbsp. olive oil and chopped parsley. Mix so the cubes are coated. Put in foil but don't cover and roast in oven for 30 minutes.Cook quinoa according to package directions.Chop onion, garlic, and parsley. Grate carrots. Slice mushrooms. Heat 1 Tbsp. olive oil in a pot, add the garlic and onion. After cooking for 1 minute, add the mushrooms, parsley and 1/2 cup vegetable stock. Cover with lid for 5-7 minutes.Check on squash, mix it around so all the sides get roasted. Now check on quinoa--if cooked through remove from heat. Mix in the grated carrot and let stand.Add the quinoa and remaining vegetable stock to mushrooms mixture and stir to combine. Then add squash and mix gently to combine.Serving Size:?makes 6 1/2-cup servings
