This is one of my hubby's favs...it's a SIDE dish now, whereas I used to make it as an entree (and use a lot more pasta). Now I make it as a 'special' side dish once in awhile and serving alongside a chicken breast or something. It's definitely TRANSITION OR MAINTENANCE ONLY due to the transitional high-carb veggie (butternut squash) and the whole wheat pasta. NOTE: modify the spices to suit your taste...

2 tsp minced garlic (jarred it OK, fresh is
always better of course)
1/8 to 1/4 cup cold water
1 tsp ground nutmeg, again freshly grated is best
1 tsp ground sage or fresh sage leaves
2 ozs. weighed DRY whole wheat penne pasta
2 tsp reduced fat parmesean grated cheese

Here is how you make Catlovers Penne with Garlicky Butternut Squash:

Bring a pot of water to boil and cook the penne in it, about 10 minutes. Remove from heat, drain and set aside.(spray with a little nonstick cooking spray to keep it from sticking).Spray a skillet with nonstick cooking spray and add the butternut squash cubes and saute 5 minutes or until it begins to get golden. Sprinkle in the garlic and saute 2 minutes. Pour in the water, nutmeg, sage and salt and pepper and cover the pan. Cook the squash until tender, about 5 minutes more. Then remove and add to the cooked penne and toss gently.
