using a nonstick bottom large pot (large enough to hold the soup in eventually), saute the turkey bacon in the oil so that it leaves some flavored oil left in the pan for sauteeing the celery, 3/4 of the green onions and the squash. take 1/2 to 3/4 of the corn and put it in a blender with half of the milk and blend it up. add in the thyme, a little more corn and milk, and the salt, blend one more time just slightly, then pour it all into the pot with the sauteed veggies - keep the bacon on the side for crumbling in to the soup when it is finished.when it is all simmering in the pot, pour in the remaining corn, the remaining green onion, and whatever milk you still want to add for a consistency that you like. let it simmer for 10 minutes or more, as long as you like - crumbling the bacon in any time.garnish with shredded cheddar if you like - use nonfat for a lighter approach. great summer side dish even though it is hot soup!
