1 Zucchini (chopped)
1 Yellow Squash (chopped)
1 Medium Sweet Onion (chopped)
1 Cup Ragu/Other Spaghetti/Tomato Sauce
1 Bag Morningstar Farms Crumble (meat Substitute)

Salt & Pepper to taste
2 Tsp Parmesan Cheese (optional)


How Do I Make Spaghetti Squash Ragout?

Here is how you make Spaghetti Squash Ragout:

Preheat oven to 350. Cut spaghetti squash in half lengthwise. Remove seeds. Spray sheet pan. Place squash cut side down. Cook 30 minutes or until fork goes through easily. Remove squash from oven, and let cool.Meanwhile, saute sweet onion in a bit of water till soft. Add chopped zucchini, chopped yellow squash, and Morningstar Farms Crumble. Add salt & pepper to taste.Mix all ingredients well in the pan. Add 1 Cup of Ragu or other spaghetti sauce to the pan. Saute 15-20 minutes over medium heat, stirring frequently.Return to the cooled spaghetti squash. Using a fork. or grapefruit spoon, shred the squash into a large bowl.Season with salt and pepper. Top spaghetti squash with the ragout from the saute pan.
