The bruschetta topping is also just as delicious on crustini or over whole wheat/grain pasta. This TECHNICALLY makes 4 servings, but to me it's two...and without the guilt! Cooking time varies depending on the method you choose for the squash - I suggest taking the extra time to bake it - the texture is drier and, in my opinion, much better.

Here is how you make Spaghetti Squash with Skillet Bruschetta:

Split squash longways and scoop out seeds. Place open side down on baking sheet and bake at 375 for 30 - 40 minutes. -OR- To save time, you can place in microwave safe casserole with 1/4 cup water and cook until tender, about 6 - 8 minutes.In large skillet, heat oil and saute onion until tender. Add garlic and tomatoes. Add salt & pepper (as well as any other seasonings you enjoy - garlic powder, onion powder, crushed red pepper, basil, etc.). Allow mixture to simmer until tomatoes soften and release their juices. Add balsamic vinegar and allow to simmer for a few minutes. ***This will NOT be a thick heavy sauce to completely coat the squash. It is very light and more for a robust flavor - so make sure NOT to skip the balsamic vinegar.With a fork, remove the spaghetti squash strands. Top squash with tomato mixture and fresh chopped parsley. Sprinkle with grated cheese.
