1 Spaghetti squash, cooked and separated into strands
1 lg yellow onion, diced
1 green bell pepper, chopped
1 red bell pepper, chopped
2 T olive oil
1 can (28 oz.) crushed tomatoes (you can experiment with what you use here)
3-5 cloves garlic, minced
1 tsp basil (fresh is best)
½ tsp oregano ( I leave this out, because I think oregano ruins everything! )
1/2 tsp crushed red pepper (optional, season as you’d like)
1 cup grated mozzarella
½ cup grated parmesan cheese (or more!)
I also add soy beef crumbles about 2 cups or less

Here is how you make Yummy Spaghetti Squash:

HOW TO COOK SPAGHETTI SQUASH: 1) Pierce the squash several times with sharp knife or two-prong fork.2) Bake about an hour in the oven at 375 F (directly on the rack)3) When done, cut open, in half lengthwise, and remove seeds and pulp. (Use tongs or a fork and an OVEN MITT as it’s very HOT)4) Scrape out as much of the dense stringy part to use as your spaghetti!RECIPE: Spaghetti Squash With Vegetables and MozzarellaMakes a veggie rich, cheesy casserole. Nice low calorie alternative to pasta, with added nutrients!Serves 6-8 peepsHeat olive oil in a skillet and add the onion, pepper and garlic. Saute over medium heat. Add crushed tomatoes, basil, and crushed pepper if using and add soy beef crumbles if you choose. Simmer uncovered for about 15 min. Mix squash well with the cooked vegetables and put half of the mixture in the bottom of a large (13 X 9 inch) baking dish. Top with HALF of the cheeses mixed together. Then, add the other half of the squash mixture, then the rest of the cheese. Bake for ~30 min or until cheese is bubbly and slightly browned. Let cool a bit before serving.
