Prep the butternut squash by cutting in half and seeding. I placed mine in a shallow baking pan and cooked it in the Microwave 15-20 minutes until just starting to get soft. In the meantime, chop up your other vegetables and add everything into a large Pot. Cook on Med. while the sqaush is cooking. Once the squash is done, cut into large chunks and add to the pot - let it simmer or serve immediately.
