Here is how you make Ital Stew:

Chop all vegetables into bite sized pieces. Spray pan with Pam and saute the Onion until lightly browned. Add Potato (you may precook or microwave first to save time), Carrot, Eggplant, and diced tomato. Add several teaspoons water and simmer on medium heat (covered) until vegetables are soft. Add greens, zucchini, and coconut milk and cook several more minutes until greens are thoroughly wilted and zucchini begins to look transparent.
