1 Package/Can (prepared w/milk or water if it's condensed) of Cream of Mushroom soup (feel free to replace this with a broth or something lower calorie/sodium/whatever - this is just all that I had in the house)

1 sweet potato (medium sized)

1 carrot (large)

3 red potatoes (medium sized, not small)

1 celery stalk (medium sized)

1 cup onion, chopped

1 clove garlic (I roasted mine first, but again, do as you choose)

1/2 cup kale, finely chopped

1/2 cup fresh spinach

1 can of canned green beans

Here is how you make Kristal's "Between Paychecks" Stew:

Makes 4 2-cup servings.You can do the prep 1st, or if you're like me, do it while cooking. I will describe the prep as I would do it. Feel free to modify!Roast garlic (if desired). This can be done days in advance if you want.Put the cream of mushroom soup (or broth if you prefer) in a pot with the garlic (pressed or minced) & put it on medium to low heat (this will vary depending on your stove) to heat up. (A crock pot could also be used & make this even easier!)Peel & chop sweet potato.Peel & chop carrot.Put chopped sweet potato & carrot into warming broth.While it is simmering:Chop red potatoes. Wait for sweet potato & carrot to get a bit tender, but not yet tender enough to eat, then add the red potatoes.Chop celery.Chop onion.By now, red potatoes, carrot & sweet potato should be tender enough to add the celery & onion.As those cook:Chop the kale.Measure the spinach.Open the can of green beans.When the rest of the ingredients look ready to be eaten as they are, add the spinach, kale & green beans.Simmer long enough to soften the spinach & kale, and to warm the green beans.Then serve!Number of Servings: 4Recipe submitted by SparkPeople user KRISTALSHYT.
