2-4 c low sodium vegetable stock or broth

Here is how you make Squash Stew:

Saute onion, carrots, celery, mushrooms and garlic in small amount of broth in large saucepan. Add cumin, parsley, tomato paste, squash, beans, peas and broth to desired consistency and bring to boil. Reduce the heat, cover and simmer until vegetables are soft, 30 - 60 minutes.
