I love this meal when we go to middle eastern restaurants but it always seems so oily. I wanted to make a version that focused on lots of fresh vegetables for bulk and wasn't oily. In a wok or large pot on medium heat, add olive oil and chopped onion, next add mushrooms and salt, stir and let cook for 5 minutes until mushrooms are wilted. Next add the carrots and peppers, stir and cook for another 5 minutes.. Next add garlic and stir, cook for 5 minutes.
