60ml/4 tbsp sunflower oil
2 garlic cloves, crushed
4 large spring onions (scallions), sliced
1 large red (bell) pepper, seeded and sliced
1 large yellow (bell) pepper, seeded and sliced
225g/8 oz mushroom, sliced
1 large courgette (zucchini) sliced
15ml/1 tbsp lime juice
15ml/1 tbsp clear honey

Here is how you make Spiced Tofu Stir-Fry:

1. Mix together the cumin, paprika, ginger, cayenne, sugar and black pepper. Cut the tofu into cubes and coat in the spice mixture.2. Heat 2 tablespoon oil in a wok and stir fry tofu for 3-4 minutes. Remove and keep warm.3. Add remaining oil to pan and stir fry the vegetables for a few minutes.4. Return the tofu to the pan with the lime juice and honey until heated through.5.
