2 Tbsp EVOO
1 clove garlic, crushed
2 slices of fresh ginger, peeled
1/2 lb fresh sliced mushrooms
1 cup sliced carrots
1 cup broccoli florets
1 cup sliced green onions
SAUCE:
1/4 cup soy sauce
1/4 cup dry sherry
1 Tbsp cornstarch


How Do I Make Stir Fry Vegetables with Tofu?

Here is how you make Stir Fry Vegetables with Tofu:

Combine sauce ingredients, set aside.Heat wok or skillet over med to med-hi heat. Put 1 Tbsp oil in pan, add garlic and ginger. Stir fry until lightly browned, then remove and discard.Add tofu to seasoned oil and stir fry for about 5 minutes. Remove and set aside.Add vegetables one at a time in this order: carrots, broccoli and mushrooms. Cook each vegetable for 1 minute before adding the next. Stir constantly. Veggies should be crisp-tender. Then add tofu and scallions. Stir fry 2 minutes. Stir sauce and add to pan, stir frying until sauce thickens.
