Put 1 Tbsp oil in pan, add garlic and ginger. Stir fry until lightly browned, then remove and discard.Add tofu to seasoned oil and stir fry for about 5 minutes. Remove and set aside.Add vegetables one at a time in this order: carrots, broccoli and mushrooms. Cook each vegetable for 1 minute before adding the next. Stir constantly. Veggies should be crisp-tender. Then add tofu and scallions. Stir fry 2 minutes. Stir sauce and add to pan, stir frying until sauce thickens.
