Broccoli, fresh, 2 stalk
Butternut Squash, 1 cup, cubes
Onions, raw, 1 cup, chopped
Zucchini, 1 cup, sliced
Cauliflower, raw, 3 floweret
Green Peppers (bell peppers), 0.5 cup, chopped
Olive Oil, 1.5 cup (to cover entire dish)
*Bean sprouts, 1 cup (optional)
Garlic, 1 tsp
*Brown Rice, long grain, 1.5 cup (1/2 cup UNcooked)
Carrots, raw, 0.5 cup, chopped



How Do I Make Veggi-Ful Stir Fry?

Here is how you make Veggi-Ful Stir Fry:

In meduim saucepan, add 2 cups of water on high heat. Add about half a cup of uncooked rice and boil. Reduce heat and simmer. Cover with lid and cook for about 10 minutes or until rice is tender. In large Frying pan, add the olive oil on medium heat to get the oil at cooking tempurature. Add all veggies to the pan. Reduce heat to Medium-Medium low and cook stirring and turning ocaasionally for 20-25 minutes. Add COOKED rice to the pan cook and additional 5-10 minutes or until veggies are tender.
