This is my "go-to" meal when I want something full of flavor but easy to make, and healthy! The basic ingredients are potatoes, tomatoes, and eggplant; pretty much you can add any other veggies you want. I don't add any spices except a little salt and pepper.

3 medium to large tomatoes, diced
1lb asparagus, cut into 1-2 inch pieces
1 bunch green onions, diced
4 small red potatoes, diced

Here is how you make Ratatouille Stirfry:

Heat olive oil in a pan. Cook potatoes and eggplant on medium high heat until starting to brown. Reduce heat, add red wine, tomatoes, red pepper, and white part of green onions. Cover and cook for 15-20 minutes (stirring occasionally) or until everything starts to get soft. Increase heat to medium high again, and add asparagus and rest of green onion.
