Slice tops off of peppers and boil the bottoms to soften them. (I used 4 peppers) Meanwhile chop the rest of the veggies and "rice" the cauliflower. Saute the veggies until tender. Once done, remove and drain bell peppers then divide veggie mixture between the 4 peppers. Top with cheese and then bake30 minutes.
