Drain and finse in cool water. Set aside to continue draining.Heat oil in large skillet. Add mushrooms and garlic. Saute 5 minutes, stirring occasionally. Add spinach and cook 5 more minutes. Set aside to cool.In a medium bowl, beat egg lightly. Stir in ricotta, basil, and salt. Stir in slightly cooled mushroom mixture.Spread a bit of sauce in bottom of small glass pan. Fill manicotti with mushroom & cheese mixture, and place in dish. Pour remaining sauce over manicotti. Sprinkle with cheese. Cover with foil and bake at 350 degrees for 30 minutes.
