Cutthe tops off the peppers and clean out the insides. Soften the peppers by steaming in an inch or so of water for 3-4 minutes then leave the lid on the pot for another 10 minutes with the heat off. Then drain. Dice the onion and start to cook over low to medium heat in a mixture of olive oil and butter. Cook the rice per package directions. Add the mushrooms to the onion and spices a bit at a time until you like the flavour. Cook the mushrooms for about 5 minutes then take off the heat. Add the cooked rice and about 1/4 cup of tomato sauce. Place the peppers in a high sided casserole dish and stuff them. Add a little of the seasonings to the remaining tomato sauce and spoon some into each pepper. Pour the rest into the casserole dish with a little water. Bake at 350 degrees for 45 minutes. Serve on a plate with the tomato sauce from the casserole spooned over the top.
