Preheat toaster oven or regular oven to 400F. Or prepare the grill on medium high.Combine cheese, chopped tomatoes, 1 tsp olive oil, black pepper, and dried rosemary in a small bowl.Remove the brown gills from the undersides of the caps using a spoon. Then remove the stem. Combine 1 tsp olive oil, soy sauce, and lemon juice in another small bowl and brush over both sides of the cap.Then divide tomato mixture between the two caps.
