2 large red bell peppers
1 cup cooked grain (I used couscous)
3/4 cup beans (I used black)
1 md. tomato roughly chopped
1/4 cup olives (I used green w/ pimento)
1/4 cup fresh parsley
2 Tbsp. oil (I used olive)
2 Tbsp. nuts (I used pine)
1/2 tsp. salt
1/4 tsp. black pepper


How Do I Make Stuffed Red Bell Peppers?

Here is how you make Stuffed Red Bell Peppers:

Pour 1 cup boiling water over 1/2 cup couscous, cover and set aside. Halve both peppers, remove seeds and stems. Drain and rinse 3/4 cup beans, drop in blender. Toss roughly cut tomatoe into blender, blend for 30 seconds. Add nuts, olives, parsley, salt and pepper. Blend to desired consistency. Add bean mixture to couscous and fold.
