1 carrot, grated
1-1 1/2 lbs tomatoes
4 oz mushrooms, finely chopped
3 red peppers
2 oz sharp cheddar cheese, grated
seasoning (I like Badia)

Here is how you make Stuffed Tomatoes and Peppers:

Saute the onion in the olive oil, and when it is starting to soften, add the grated carrot. Meanwhile, slice the tops off the tomatoes and scoop out the middles, adding the pulp to the onions and carrots, and putting the tomato shells and lids to one side.Chop up one of the peppers finely, and add it plus the mushrooms to the vegetable mix, and add seasoning. Cook for a few minutes, until the peppers and mushrooms have softened a little, then add the rice. When the rice mixture is warmed through, add the cheese and take off the heat.Then gently spoon the rice mixture into the tomato shells and place the lids on top. Remove the stalk and seed from the remaining peppers, and then use the rest of the rice mixture to stuff them also. Place on a foil covered baking tray and bake for 10-15 minutes at about 350C.
