Slice off the tops, seed them, and set aside.In a large frying pan over low-med heat, sautee the herbs, garlic and onions for 2-3 minutes. Add the zucchini and tofu and let cook for 5-7 minutes. Add the corn and cook for another 3-5 minutes. Remove from heat.Pour the tofu mixture into a large bowl and add the beans and crushed tomatoes. Mix well. With a large spoon, stuff the peppers and replace the tops.* Put peppers in oven and let bake for 20 minutes. Cover the peppers with tin foil and let bake for another 20 minutes. Serve hot.*Leftover mixture can be heated in microwave and eaten on it's own later, or added to an omelet!
