1 medium onion chopped
64 grams of sliced olives

.5 cup fat free mozzarella cheese (shredded)
3 green bell peppers

Here is how you make Bell Peppers Stuffed with Chickpeas and Quinoa:

Preheat oven to 375 degrees. Meanwhile cook quinoa according to package directions. Slice in half the bell peppers, and remove seeds. Wrap peppers in aluminum foil and place in oven for approximately 15 minutes to cook slightly. Remove from oven and after allowing to cool slightly, remove from foil. Meanwhile, chop onion and saute with olive oil in medium high temp. Add, olives, prepared quinoa, chickpeas, and tomatoes. Lower heat and simmer 15 minutes then add cheese. Place foil on bottom of a baking sheet, and fill peppers with equal portions. Bake 15 minutes. And enjoy!
