Cook for 15-20 min. Preheat oven to 375FSaute onion (if desired), garlic (if desired), carrot, zucchini, mushrooms, and celery until soft. Add cooked quinoa and lentils. Add bouillion (I use vegetable), tomato sauce and curry powder and saute until sauce is mostly absorbed. Mix in baby spinach leaves until just wilted. Squeeze juice of 1 lemon over mixture. Turn off heat and set aside. Cut bell peppers in half (yield 8 halves) and place in pam-sprayed large casserole dish.Fill the 8 bell pepper halves with mixture and cover casserole dish with foil. Bake at 375 for 25-30 min covered.
