1 cup quinoa, uncooked
8 Morning Star Farms Grillers Prime patties
1 - 28 oz can Diced Tomatoes
2 Tbs olive oil
1 onion, chopped
3 stalks celery, chopped
1 cup carrots, chopped
1/4 cup sun dried tomatoes, chopped
2 Tbs Worchestershire sauce
Tabasco sauce to taste
Salt and pepper to taste

Here is how you make Vegetarian Stuffed Peppers with Quinoa:

Preheat oven to 375.1. Cook quinoa in vegetable broth according to package directions until done using 2 cups of the vegetable broth.2. Slice red peppers in half lengthwise and remove seeds. Place on baking sheet sprayed with cooking spray.3. Heat olive oil in pan over medium high heat and saute celery, onions, and carrots until mostly tender.4. Heat Morning Star Farms patties in microwave until slightly thawed. Shred patties and set aside.5. When quinoa is done, add to vegetables in saute pan. Add the can of diced tomatoes, sun dried tomatoes, and Worchestershire sauce. Stir in the Morning Star patties.6. Heat mixture until heated through. Add the rest of the vegetable broth as needed to keep mixture moist.7. Season to taste with Tabasco, salt and pepper.8. Stuff pepper halves with mixture.9.
