Here is how you make Stuffed Bell Peppers w/Mango Salsa:

Place peppers skin side up on baking sheet. Place in oven at 375 for about 10 minutes. Stir tomato, garlic, and cumin into rice. Stir together mango and salsa. Remove peppers and turn them over. Sprinkle half the cheese into each pepper. Divide rice between each pepper. Top with remaining cheese. Return to oven for another 10 minutes or until cheese melts. To serve, top each with 1/4 cup salsa and sprinkle with chips. Makes 4 servings.*To make salsa, combine 2 large diced tomatoes, 1/2 small onion, diced, and 2 tbsp. cilantro.
