Here is how you make Stuffed Portabellas:

Cook quinoa using normal directions.heat skillet on medium w oil. add galic and saute. once soft, stir in rotel. simmer. Add fresh spinach a handful at a time, cover to wilt, continue to stir and add spinach until all wilted. add quinoa and stir. remove from heat.Wash and remove stems from portabellas. Brush with italian dressing lightly. Place face down on lined and oiled cookie sheet. Broil for 7 minutes, and flip them face up. crumble feta onto cap. Top with tomato/spinach mix.
