Here is how you make Fruit and Quinoa Stuffed Acorn Squash:

Preheat oven to 400 degrees. Place acorn squash face down on a foil lined baking sheet. Bake for 15 minutes. Meanwhile, cook quinoa according to package directions. Toss with onions, dried fruit, almonds, garam masala and salt and pepper. When squash is done, flip over and divide filling between the four halves. Top each half with 1/2 tablespoon of butter and return to oven for 30 minutes, or until squash is tender and flavors blended. Serving Size: Makes 4 servings.
