In small pot bring 1 cup water to boil with bay leaf. Add instant rice and set aside.Meanwhile slice the top off all the tomatoes, reserve. Scoop out the inner flesh of the tomatoes with a spoon, leaving a thick shell. As you work, put the flesh in a strainer set over a bowl to collect the juices.Chop the tomato flesh and put in bowl. Add rice, mozzarella, ham, 1/2 cup grated cheese, basil and oregano. Toss to combine.Pour reserved juice in the bottom of a 9 x 13 baking dish. Evenly divide stuffing in tomatoes. Arrange tops in the baking dish and place the stuffed tomato on each top (this helps them stand up during cooking). If you have any stuffing leftover, roll into 'meatballs' and place in spaces in the baking dish. Drizzle tomatoes with olive oil and sprinkle tops with grated cheese.
