1 can Garbanzo beans, drained
2 Tbsp Ground Cumin
2 Tbsp Chili Powder
Spray of Pam or other non-stick pan coating

Topping:
3 Cups of Spinach (chop after measuring)
1/3cup roasted red peppers, cut into slices
2 Tbsp Extra Virgin Olive Oil
2 Tbsp Lemon Juice
1 tsp Black pepper (or to taste)
1/4 tsp salt
3 oz Feta Cheese, crumbled

Shells:
6 Corn Tortillas
2 Tbsp Olive oil, for frying tortillas


How Do I Make Mediteranean Tacos ala Valerie?

Here is how you make Mediteranean Tacos ala Valerie:

Coat an approx. 10" skillet with non-stick spray. Add beans, cumin, chili powder and heat over a low to medium flame, stirring and gently mashing. While the beans are heating, whisk the olive oil, lemon juice, salt and pepper to blend. Place the spinach in a medium bowl and add the olive oil mixture, stirring gently to coat, and avoiding bruising the spinach. Add approximately 1/3 of the 1/3 cup of roasted peppers to the spinach mixture, reserving the rest.Once the bean mixture is heated through, remove from heat and set aside.In a non-stick skillet, heat the 2 Tbsp of olive oil. Fry the corn tortillas until slightly stiff, remove from pan and place on paper towels. Gently blot any excess oil off of the tortillas prior to serving.To assemble, place a tortilla on a plate, spoon bean mixture onto tortilla. Top beans with a few sliced red peppers, and place a generous amount of spinach mixtuer over the top.
